Here's the recipe to share:

2 cups of mixed lettuce - I chose spinach, baby romaine, and green leaf

1 TBSP of dried mixed berries

1 TBSP of tomato and herb feta cheese

1 TBSP of fat free feta cheese

1 TBSP of Brianna's New American dressing (creamy balsamic)

1 TBSP of balsamic vinegar

1/4 cup of chow mein noodles

4 oz sliced thin seasoned chicken breast

Mix all together et voila!

About 375 calories and 33 grams of protein!

Enjoy!
Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-19658737345984485872012-03-16T12:38:00.001-04:002012-03-29T07:22:49.039-04:0028 Days of Healthy FocusIt's time for another 28 days of focus: food logging, exercise, and commitment to a healthy lifestyle. This focus starts today and will last through spring break and end April 15th. Hopefully, you will be on your way to a fit and healthy summer!!

With the help of a countdown calendar, you can see your progress as well as being able to see yourself get closer to your goal.

As a group, we will be able to motivate and cheer each other on. Sharing successes help to keep others on track - if you can do it, I can do it. MyFitnessPal enables us to be friends with each other, track our food, and motivate each other by cheering each other on and reading each others logs.

Good luck!! Stay focused and kick some butt!!

- Posted using BlogPress from my iPhone

Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-10096030590145700842012-02-22T07:49:00.000-05:002012-02-22T07:50:35.091-05:00Mix up your workouts!!Working out has to be fun and challenging. Trying new things can help to keep you focused on your workout and weight loss goals. I have been working out with a great friend for the past 4 weeks religiously to get ready for race season. We have been logging our food every day, working out between 4 and 6 days a week and have actually seen results.

In addition, this great friend has been going to a boot camp class. I have always loved going to classes for the same reason people like to come to me - they don't have to think about what they are going to do and they have someone to make sure that all moves are being done correctly. She invited me to come with her last Saturday and I could finally join in - I was psyched!!

Well, we walked in to Living Lean at 7:45 AM on Saturday and I was completely IMPRESSED! What a great facility Mark Derry has - clean, enough space, wide range of equipment, etc. I was also impressed by their professionalism and non-militant focus on each participant. The moves were tough and new to me and each participant has the ability to change the weight amount specifically for them - including having Mark or Jen, his assistant, increase the weight amount for your ability - to my dismay of course...

It was a great class and I plan on going back whenever my schedule allows. I was physically tired at the end of the workout, but I had no idea how sore I would be!! WOW! Being sore has reminded me how important it is to mix up your workouts and incorporate new ideas. Whether you incorporate new classes, a personal trainer, yoga, a new sport - whatever you decide is going to benefit you and your workout routine. Mix it up and trick your body into something new!

If you haven't checked out Living Lean here in Chagrin Falls, I highly recommend it!Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-62513585588055559052012-02-09T10:57:00.000-05:002012-02-09T10:57:29.909-05:00Healthy Valentine's DinnerCooking a Valentine's Day dinner? Looking for some healthier options that are still very tasty and romantic? If you have been to our house for dinner, you have probably had this meal. It's my favorite:

Steak, potatoes, vegetables, salad, and of course, dessert.

Buy 2 - 4 red potatoes per person depending upon size of red potatoes. Slice the potatoes extra thin and soak in a bowl of water. Lightly Pam 2 cookie sheets and lay sliced potatoes flat on sheets. Add parsley, garlic powder, onion powder, cayenne pepper powder - all according to taste preferences. Bake in oven at 375 until crispy - could be close to an hour depending upon your oven.

My preferred salad is a caesar for this meal. Chop or tear up organic romaine lettuce. I also like to add organic red leaf lettuce for a bit of color and texture. We enjoy two light caesar dressings both from Ken's. First is Ken's Steak House Lite Caesar and the other is Ken's Light Options Caesar. It's your preference. A trick I also use is with any oil based dressing, I pour out all the oil on top before I mix it up - you won't miss it!! By doing this, you lower the fat and calories in addition to it being lite.

Buy your favorite vegetables - for this meal mine are asparagus, broccoli, and mushrooms. Clean and chop into bit size pieces. Lightly spray a skillet or wok with Pam (or preferred spray), add vegetables, and season with onion powder, garlic powder, and a touch or parsley. As the vegetables begin to heat up, add a bit of water to steam the vegetables instead of burning them against the dry pan. Remove from pan when brightly colored and slightly soft.

Buy your favorite lean cut of beef - sirloin filet, filet mignon, etc. Crush black pepper into the steaks and press on with your fingers. Grill them according to your taste.

Lastly, dessert. I found 2 great low fat recipes online as I am not a good creator of desserts. Here you go: Chocolate Fondue and Triple Berry Mini Cheesecakes.

Add your beverage of choice but try to keep low calorie, please!

Have a wonderful Valentine's weekend!!Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-55450450739536704572012-02-06T19:50:00.000-05:002012-02-06T19:50:20.719-05:00Detox After Super BowlSo we all did it - ate too much last night during the pre-game, game, and post-game. So now what to do?

Here are my suggestions - take or leave what you'd like.

First and foremost - water water water!! Drink your 3 liters today!! This will help to wash out and rid your body or the toxins that were consumed.

Exercise!! This is another great way to rid the body of toxins.

Load up on the healthy foods - fruits, vegetables, and lean protein. It may seem hard to eat well when you don't feel great, but your body will thank you.

Log your food and watch your portions - it will make all the difference.
Last but certainly not least - get some good rest tonight - use your DVR. You will wake up refreshed and ready to continue your healthy lifestyle.

Good luck and live well!!Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-19303072148941591182012-01-06T06:43:00.001-05:002012-01-06T06:44:26.945-05:00Why Resolutions Don't WorkFor those who know me, this is going to seem crazy because I live for lists - to do lists, goals, New Year's morning to recreate the person I want to be. But not to be bah-humbug, I have figured out why I am not that newly recreated person. Resolutions don't work.

If you went to the doctor and she told you that you had to lose those stubborn 10 pounds or you were going to DIE - what would you do? You would, hopefully, lose those 10 pounds. TODAY - you would start today and never look back. It wouldn't matter if it was April 15, October 15, or January 1. You would start today.

But since resolutions are pretty much optional, you work on them, think about them, sometimes move towards the end result, but most of the time they just hand over your head.

So what to do for someone like me who loves lists and goal settings? I am going to start each day with a focus and each morning I'll reset that focus - eat better than yesterday and exercise more today.

PS - I still have the list!Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-62540092457700958102011-08-13T14:10:00.001-04:002011-08-13T14:28:09.673-04:00Happy 1st BirthdayHappy 1st Birthday to Nicolas! We all made it!

What a momentous day today is. We made it through the year and there are no more babies in the house! No more bottles, no more formula, no more baby food - hooray hooray!

It has been a long time since I have written and it's time to get back into the groove of writing and time to get rid of the last 5 pounds! Time to focus and commit to it. It has been a great summer for exercise, races, and tennis. It has also been a summer full of eating and drinking. Time to get focused on health now that the kids are a bit self sufficient.

Here are some goals that I am going to focus on to get those last pounds off:
* log all food in MyFitnessPal
* eat fruit and vegetables for snacks
* exercise 4 to 5 days a week
* drink at least 2 liters of water a day - 3 would be best
* take vitamins

Anyone joining me? Ready, set, go!

- Posted using BlogPress from my iPad

Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-53730751798246534992011-02-08T11:13:00.001-05:002011-02-09T19:47:33.281-05:00Schedule it!Football is over - yea! Dead of winter is here - yuck! Time to have a focus on food and exercise.

I like having a calendar or schedule to look at on a day to day basis - and ironically, so do my girls. Whatever is on the schedule - we do. When it's not on the schedule - we don't do anything and that when the house unravels. Sound familiar?

I took some time this weekend and again this morning while the girls were at school to take a look at the calendar. Over the weekend, I scheduled my own Personal Trainer for Wednesdays and a workout Mondays before the workweek begins. On Saturdays I teach my class (if you are interested let me know), so there are still a few open slots in the calendar to add workouts. I added a yoga class for Fridays so we'll see how that goes.

Anytime things are written whether they be your schedule, goals, or to do's, etc, the more you are apt to follow through on them. Take a minute and think what should you have written down?

- Posted using BlogPress from my iPad

Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-7596272738509081102011-01-28T21:31:00.001-05:002011-01-28T21:31:03.141-05:00Yours TrulyAnyone who either lives or has lived on the east side of Cleveland has heard of or gone to a Yours Truly restaurant. Now this restaurant has a strong meaning to me - not only have I been going there since I was 11, a group of us used to go there every morning before school our senior year.

As an adult, I have not been there as much and as a health professional I have been there even less. But as a pregnant woman, which I have been for the past 4 YEARS, I have frequented this establishment. Every cheat meal or "I deserve this" meal, YT has been the place!!

Now don't get me wrong, there are many healthy items on the menu. I just choose to ignore them all every time I walk in the door - I just cant help it!

So, Gil and I drop off the girls at school this morning and are off to a meeting. On the way to the meeting, the gentleman calls and asks if we can postpone the meeting until later in the day. No problem. Gil and I look at each other and say breakfast. The idea of eggs and toast fill my head - until we enter the village of Chagrin Falls and can't decide where to go. I know in my head that if we go to YT, I am doomed. That whole idea of eggs - GONE AND FORGOTTEN. But I say to myself, it's only 9:10, you can do it and it's truly breakfast time - not to mention - still trying to lose the notsos that I ate in the past pregnancy with Nicolas. But when the waitress comes over for the order out comes a junior notso fries, no sour cream. I can't do it. I swear they call my name. Notso fries are cottage fries, with melted cheddar cheese and bacon on top - heart attack on a plate. Shame shame shame!!

Temptation is awful!! Off course its not easy, but what should we do? Well, my preference is to avoid. Don't go to YT in the first place. Portion control is also a good remedy for those who can do it. I can do this well with certain foods, but not all. Lastly, if you have a plan stick with it. Unfortunately today, breakfast wasn't on the plan so I didn't have a plan.

Do what you can and remember that you will have times that you falter. Just try to make those falters few and stick to your plan as often as you can.

- Posted using BlogPress from my iPad
Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-90708362394606777582011-01-15T09:14:00.001-05:002011-01-15T17:30:31.733-05:00Called out!So I am managing session 2 of the 6 week accountability and weight loss program... I am also part of the group trying to lose my last 10 lbs of baby weight.

I preach and preach about logging your food because that is how you are going to see exactly why or why not you are losing weight. Well, this week I did a lot of it in my head - which incidentally I also preach NOT to do and I only lost .5 lbs.

But what I was not expecting was 2 of my ladies called me out and saw that I was not logging!!! Ha!! I love it! Yes- call me out! Practice what you preach, right!!

Thank you ladies, you know who you are, for giving my own words right back to me. Sounds like I have a challenge for the week ahead - LOVE IT!

- Posted using BlogPress from my iPad

Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-14674277823021451702011-01-11T10:08:00.001-05:002011-01-11T10:08:36.288-05:00Back to RoutineKids are back at school, husband is traveling again, and construction is 99% complete! Well, those who know me know that I am not going to give up my drink or wine, but I can cut down on the amount and insert a club soda or water in between. That will slow me down and hydrate me more.

Now for the pizza! The better and healthier option is to make it at home. I like Boboli or using wheat pitas. Also the kids can help to add their favorite toppings and make it their own. Also go for lower fat or reduced fat cheese.

Well enjoy your evening!

- Posted using BlogPress from my iPad
Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-17916171648330209772011-01-04T20:25:00.001-05:002011-01-04T20:25:03.301-05:00Happy 2011!!Happy New Year!

What a crazy holiday season! We had family in for Thanksgiving, Nicolas' baptism, Christmas and New Years Day. It was a great time but ready to get back into the groove and back into a schedule. Today was Back to School, family left, and time to clean and back (or start) to log my food.

The first Strong Like You 6 week program of 2011 started this weekend also. What a way to start the year - on a scale. I know it's awful for everyone to stand on a scale but after 2 months of indulging - that number is BAD! Definitely time to refocus and plan ahead! If you are interested in joining the 6 week program let me know! You can do it in person or virtually.

So today I logged and drank 5 cups of water. If everyday can get a bit better, that is a great accomplishment.

What is your health goal for the upcoming year?

- Posted using BlogPress from my iPad
Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-35649302064428605242010-11-04T14:24:00.001-04:002010-11-04T14:24:58.426-04:00Fallen off the wagon again??Unbelievable!!! How does this happen? Why does this happen?? Why is it so hard to stay ON the wagon??? I know, I know, life gets in the way. Plus - it's more fun to be off the healthy lifestyle wagon, right??

Well - I am going to attempt another time to get back on track. Water, logging, and vitamins are on tap as my first step. These are things that do not require any more time from me - time is a luxury I just don't seem to have right now. I am just trying to shower a few times a week.

Anyone with me?? What are you going to do to get back on track or to increase your healthy lifestyle??

- Posted using BlogPress from my iPhone
Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-67989437140585504392010-10-14T14:10:00.001-04:002010-10-14T14:10:15.423-04:00Can you get your old body back??Ok ... So I'm feeling a bit deflated. A few people have said to me lately - your body will never be the same after kids so don't disappoint yourself by trying.

Yes, I've had 3 kids in 3 years and yes, I am not shrinking like I would like, but...

Isn't that awful and mean???

I am willing to put in time and work - but is this true. I hope to prove it wrong.

What do you think?? Anyone with me on this??

- Posted using BlogPress from my iPhone
Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com1tag:blogger.com,1999:blog-1444027854790210928.post-82605719943539947782010-09-26T07:25:00.000-04:002010-09-26T07:25:34.881-04:00Changes Made!So I am taking my own advice - making some changes!

A few easy things to get started and to feel like progress is being made is the best way to kick off a plan. What can you do in 48 hours to get started? Here are 5 suggestions to get started.

1. I cleaned out my refrigerator of all "bad" food!! Yes, it is pretty empty but a starting point.
2. Made an appointment with my personal trainer. This is going to be scary, but it's the only way I am accountable to keep on working out. He's coming on Friday for our first official workout...
3. Started to exercise. I just did it - don't think about it - just go!
4. Logging food - I know everyone hates this. It's time consuming and a pain in the butt to do, but IT WORKS!!! If there is one thing out there that I can recommend its to log. It doesn't matter how you do it, just get it down - on paper or electronically. I am using MyFitnessPal and there are many others out there - pick one that works best for you!
5. Increased water intake. Get a BPA free bottle and drink water!!

Even though it sounds like a lot, once you get started and keep it up for a few days, it will not only get easier, but it will become part of your routine.Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com2tag:blogger.com,1999:blog-1444027854790210928.post-9369582083697286222010-09-23T20:44:00.001-04:002010-09-23T20:51:21.653-04:00How do you start living healthy? How do you get back into exercise and eating healthy when you have been away from it for a while? Tough question!!

For many moms, we focus on our kids and put ourselves on the back burner. Even though this is normal, it is the worst thing to do. We need to be role models for our children.

So - how do we start? Isn't that the hardest part? I sure think so!

Make the decision to change. Change something - anything! Change something once a week or one small thing a day - you choose - just decide to change a little bit at a time.

Make the decision and get yourself psyched to change!!Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-23749105383637895732010-09-09T14:38:00.001-04:002010-09-09T14:42:56.497-04:00Backtrack: Surviving Children's Birthday PartiesBack from hiatus! It's been a while - Nicolas Thomas arrived on August 13!! We are all doing well - keeping busy - getting some sleep - and trying, to no avail yet, to get into a schedule.

I am going to backtrack just a bit to the days before he arrived...

Mariela's Third Birthday
Mariela turned 3 on August 9th. We had a small celebration with my parents and grandmother the day before. While encouraging Mariela's three year old independence, I asked her what she would like to have for dinner on her birthday. She replies, "HOT DOGS!!!"

Quelle horror!!! Right?

Not really!! I am glad she likes all kinds of foods - even if it is the worst one for you.

As hot dogs are a staple at most parties and summer holiday weekends - including those for adults - what is one to do to in order to maintain a good way of eating?? Eat well as much as you can. Go ahead and have one (1) hot dog and then try to fill in the gaps with better sides. Or if you can, bring a side dish that you know is healthy and won't ruin your good work.

So, that's what I tried to do. I made side dishes that wouldn't break the food budget: pasta salad (recipe below), corn on the cob, watermelon for dessert, and of course a birthday cake. By offsetting the bad food with some healthy alternatives, the meal does not seem like a waste. You are able to enjoy the cookout with everyone else.

Now the hard part is staying away from the second hot dog or the chips, dips, and other sides. Your best bet if you are unable to have healthy side or alternatives is to eat at home before you go. It's not as much fun, I know, but it's a great way to fiend off the hunger when the Doritos are calling your name.

Good luck at the kids' parties!!

Pasta Salad
1 lb of cooked Barilla Plus Rotini pasta
Favorite chopped vegetables - I choose carrots, red peppers, cucumbers, black olives
Feta cheese: 1/2 regular and 1/2 reduced fat
Dressing: Greek, Italian, or oil/vinegar; no creamed dressings

Mix all ingredients together and keep cold until serving. Enjoy!!Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-45885143311194667602010-08-02T20:29:00.000-04:002010-08-02T20:29:26.172-04:00Dinner with Prego LexOne more week down... still here... no baby yet...

What a great dinner we had Saturday night. Not only were there great friends, but fantastic food cooked to perfection!!

Gil and I went to a great friends' home for dinner, desserts, and drinks on Saturday. We always have a great time with them, but this time was over the top! Since it's probably my last dinner pregnant with them, the hostess splurged and wow did she impress! Flank steak cooked to perfection for all tastes, scalloped potatoes (I'll get to them in a minute), string beans, and stuffed tomatoes. We brought a salad (recipe below) and some vino for the group!

We got into a discussion about eating with me - pregnant and not. Yes, I do change my eating habits when pregnant - I splurge more, eat more and enjoy food more, but I still try to eat as healthy as possible. Some may say, shouldn't you eat better when you are pregnant since you are eating for a baby as well? Well, maybe I should rephrase and say I enjoy heartier food more and in slightly larger quantities.

But back to the meal... The scalloped potatoes were amazing! I don't know what is in them and I certainly don't want to know. They tasted too good to ruin them in my head with the actual ingredients. But this is the point I want to make. If you don't eat scalloped potatoes or food such as this often - splurge! Go for it!! You have to enjoy yourself and indulge every once in a while. I love food, but I also try to make sure I don't go crazy too often with less than perfect-for-your-health options.

Bottom line - the non-pregnant Lex will request the scalloped potatoes again! But, I will make room for them in my food log. They are too good to never have again!!

Salad Recipe
Head of organic red leaf lettuce
Head of organic romaine lettuce
Strawberries - quartered - about 2-3 per person
Goat cheese - 1 TBSP per person
Ken's Healthy Options Raspberry Walnut Dressing - 1 TBSP per person
Candied walnuts - 1 TBSP per person
Mix all ingredients together - ENJOY!!Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com0tag:blogger.com,1999:blog-1444027854790210928.post-88443969952393487642010-07-30T13:40:00.001-04:002010-08-02T20:09:08.002-04:00TGIF TipQuick tip: remember to take a multivitamin each day!
This is going to be a crazy journey my friends - that I am sure of. Everything else - not so sure...

With 4 weeks left, I am anxious - for many things: meeting our new baby boy, changes in family dynamics, getting my body back to myself nevertheless to what it was before, enjoying a DRINK!!, and lastly getting back to running and exercise!

I am going to miss my almost nightly bowl of ice cream with crushed Heath bar pieces and of course the occasional Yours Truly Not-so Fries. But, to have my body back as my own - it's worth it!!

In addition to sharing my journey back to fitness and normalcy with two toddlers and a newborn, I will be offering tips or tricks or workout songs or anything to help motivate and focus. I welcome your thoughts and feedback on how I can help you achieve your fitness goals.

Strong Like Mom Tip: Find a BPA-free water bottle that works for you and use it! At least 8 cups (64 oz) of water a day!! Start slow and attach the water bottle to your hip. Alexis R Maciashttp://www.blogger.com/profile/05353725151384665037noreply@blogger.com5
